Since I have been a few meetings where it took a while to figure it out (solution courtesy of Andrea Bastoni)
Login to your zoom portal profile (e.g., https://xxx.zoom.us)
On the left side bar, go to "Settings", select "Meeting" from the page top bar.
Search for "transcript" (toward the end of the page).
Disable "Full transcript".
Restart the meeting.
